Kansas City will experience schmears of joy on Friday, March 18, because that’s when Meshuggah Bagels opens at 1208 W 39th Street. The new shop will feature New York-style bagels and schmear (bagel shop-ese for spreads) from Pete and Janna Linde.
The Recommended Daily sat down with the couple last month to talk about their vision. Pete is a New Jersey native, who has long been on the hunt for a “real bagel,” in Kansas City. To that end, he believes he’s dialed in the recipe for bagels (with the right balance of salt, sugar and malt) at their baking facility in Pleasant Valley, Missouri. The bagels, which are certified Kosher, will all be made there and then finished at the 39th Street shop.
Meshuggah Bagels will serve whitefish salad and lox from the Acme Smoked Fish Corporation in Brooklyn, New York, coffee from Maps Coffee Roasters in Lenexa, and schmears made with Green Dirt Farm cheese in Weston. The bagel shop is open 6:30 a.m. to 2:30 p.m. Tuesday through Friday, and 8 a.m. to 2 p.m. Saturday and Sunday. The phone number is 816-330-6016.
